Another great recipe from Noble Pig. It's perfect for summer because it's a nice frosty treat and there's no cooking involved, just mixing.

I just made this tonight and I love it. It is so easy to make, this is all you will need: a pound of strawberries, one egg white and 1/2 cup sugar.

And this is all you will need to do: 1) chop up all the strawberries 2) whisk egg white for 2 minutes 3) use hand mixer on medium speed to gradually mix in sugar 4) add strawberries and mix on high speed for 15 minutes 5) freeze for 4 hours. Make sure to follow the directions in order! I got ahead of my self and whisked the egg white before I even chopped up the strawberries. I think I was excited about separating the yolk from the egg white, I love doing that! By the time I was finished cleaning and chopping up the strawberries, the egg white had lost its frothiness and I had to start over. I'm no expert, so maybe I didn't really have to start over, but I just went with my instinct. 

You may be asking yourself, "Do I really need to beat the strawberries et cetera for 15 full minutes?" Yes, you do. Because it takes 15 minutes for the mixture to make this wonderful transformation. Behold!

Kinda miraculous, huh? All that volume from basically just one egg white and sugar. They should do this as an experiment in chemistry class, or physics, I don't even know how it works so I don't know what scientific discipline it falls under! Any readers care to enlighten me?

After you freeze the mousse it looks just like ice cream, but it is as light as air and kind of collapses in your mouth in a satisfying way like cotton candy. I love that it has all the flavor of ice cream, but none of the heaviness that makes me feel like I ate too much!

I'm making this right now, while Bena watches intently. I didn't have strawberries so I used cherries. I will let you know how it turns out.
