After our Alaska trip, we've recently come into possession of a whole lot of halibut! Today, I will walk you through this recipe in which this monster of a fish....

becomes this delightful dish.

Ok, full disclosure, I don't really know if the halibut we ate is the halibut I caught, but someone in our family caught it!
This is a recipe from Real Simple. I find that many recipes from this magazine use a creative mix of ingredients that result in a finished product with clean, simple flavors. This recipe definitely falls under that category. It's a nice light dish perfect for summer.

These are the ingredients you will need, and this is what they will look like after you prepare them. This is the first time I've cooked with bok choy (I used baby bok choy). I love it!

You assemble the little parchment paper packages in the following way: 1) place a handful or so of bok choy and red pepper on the parchment paper 2) place halibut filet on top, add pepper 3) add orange zest/ green onion mixture 4) finally add ginger soy sauce mixture.

Fold up the parchment paper in whatever way works. After they are done cooking, carefully open the parchments, there will be a ton of steam. The recipe says to serve them straight out of the parchments, but I think that is silly. No one wants paper on their plate!

It's perfect served on a little bed of rice. It absorbs all the delicious sauce plus it makes the meal more hearty. That's that! Give this recipe a shot, just for the halibut!
