I love this recipe I adopted from noblepig.com! It's super easy and delicious. Instead of lasagna noodles you use ravioli! It's genius!
Here's what you'll need: 20 oz. fresh cheese ravioli, at least 20 oz. marinara sauce, 10 oz. frozen chopped spinach (thawed and squeezed of excess moisture), 1 cup mozzarella, 1 cup cottage cheese, 1 egg, 1 tsp oregano, a dash of nutmeg (not shown), parmesan.
Mix together the spinach, cottage cheese, mozzarella, oregano, nutmeg and egg. In a greased, 9 X 9 inch pan, spread 3/4 cup of marinara sauce. Add 30 ravioli on top of the sauce.
On top of the ravioli, pour another 3/4 cup of marinara sauce. Then cover with the spinach and cheese mixture. Add 30 more ravioli, then spread the remaining 3/4 cup of marinara sauce. Cover with aluminum foil and bake for 30 minutes. Let cool for about 10 minutes, then sprinkle with parmesan cheese.
If you're like us, it serves 4. If you eat normal serving sizes, it serves 6. Enjoy!
