Last night, I was asked to share some of my tried and true recipes. This one is by far my favorite. Enjoy!

Adapted from Bride & Groom First and Forever Cookbook
Makes about 50.
2 cups flour
1 teaspoon baking soda
1 teaspoon kosher salt
1 teaspoon ground cinnamon
2 eggs at room temperature
2 teaspoons vanilla extract
1 cup unsalted butter at room temperature (Don't just put the butter in the microwave. To warm it up, I usually crush it a little with my hands while it is still in the wrapper until it is malleable.)
2 cups light brown sugar
2 cups rolled oats or quick cooking oats
2 cups chocolate chips
2 cups dried cranberries

Preheat oven to 350 degrees. Stir together the flour, baking soda, kosher salt, and cinnamon until well mixed. Set aside.

In another bowl, stir together eggs and vanilla. Beat the butter and brown sugar until creamy and blended, either with a hand mixer or stand mixer. Add the eggs and vanilla mixture to the brown sugar and butter mixture in two additions. Scrape down the sides of the bowl and continue mixing until it is all incorporated. Add the dry ingredient mixture (flour, cinnamon et cetera) slowly, and mix on slow speed until it is absorbed. Stir in the oatmeal, chocolate chips and cranberries. If you don't have two cups of chocolate chips or cranberries, just throw in what you have. 

Put them on prepared cookie sheets in whatever way you prefer, using spoons, hands, whatever. I like to round them into balls and put 12-15 on a cookie sheet. Bake until the edges, only the edges, are golden brown and the centers are still not quite done, usually about 10 minutes. Let them cool on the cookie sheet for a few minutes, then remove, and eat them.

I usually have cookie dough left over. You can put it in a ziploc bag and refrigerate it for a day or two. You could probably leave it in the fridge longer, by why would you when you could be eating even more cookies?
